It would be greatly appreciated if anyone could provide me with some links as to how i can produce a product that is stable and floats in water. using extrusion. if not i will post later some questions and problems i am having.

You could produce foamed pellets, like puffed cereal, and then tumble coat it with one of the many celluose deriviatives avaialble. These cellulose materials will not resist water forever, but they are edible, and won't allow the puffed product to get water logged right away.
