Why would I ever need to use a ball check non return valve? VS. a normal 3-5
piece tip assembly.

ball checks are known for their positive shut-off (quicker/faster than check rings) and potential for material stagnation. Be cautious if considering lots of material/color changes. Not recommended for heat sensitive materials. May be a good choice for short cycle thin wall molding...
